What's for dinner tonight - Part 1

There are a few recipes that the hubs and my son ask for time and again, and this is one of them.  Crispy Baked Barbecue Chicken.  Mmmm tasty sounding huh?  Would you be even more stoked if I told you it's a Weight Watchers recipe???  Oh yeah baby, so it not only tastes fab it's good for you too!  How awesome?!?!

Or tasty, as the case may be.  These chicken strips are TO DIE FOR.  One of our favorite places to go for takeout is Zaxby's and if you've eaten there you know this place has nummy Buffalo fingers, but it's so so so so bad for you.  This recipe is our substitute.  No joke, if we have this during the week, when takeout night comes we skip the big Z and go with something else.  They are moist, tender, and full of flavor!

In fact, I'm about to make this one of our go to recipes as it has simple ingredients, one of them would be the only thing we don't always have in the house....what ingredient would that be you may wonder...well BBQ Lays chips that's what.  Oh yeah, that's the breading....you ready for this recipe yet?????  One of these days I'm going to try another chip flavor just to experiment.

P.S. I skip the cheese, I'm sure it's tasty with it but the first few times I forgot the cheese LOL and I've made it without ever since.  It tastes awesome without it, plus saves some calories.

P.S.S. Sorry about not having a picture.  Dinner last night was INSANE so I didn't have time to.

1 1/2 lbs chicken breast tenders
1/2 cup BBQ sauce (any brand/flavor you like)
5 cups BBQ flavor baked potato chips (such as Lays, I've also used regular Lays, both ways are awesome), coarsely crushed
3 tbsp instant minced onion
Cooking spray
1/2 cup (2 ounces) 50% reduced-fat shredded cheddar cheese divided

Preheat oven to 400F

Place chicken in a large heavy-duty zip-top plastic bag.  Add BBQ sauce; seal bag, turning to coat chicken.  Chill 10 minutes.

Combine potato chips and minced onion in a shallow dish.  Remove chicken from bag, discarding sauce.  Dredge chicken in potato chip mixture.  Place chicken on a large baking sheet coated with cooking spray.  Coat tops of chicken with cooking spray.

Bake at 400F for 12 minutes or until chicken is done.  Sprinkle chicken evenly with cheese.  Bake an additional 1 minute or until cheese melts. Yields 4 servings.
